Well, it’s mid-November already…and dare I say it, almost time to get our Christmas on!
Here we have your latest midweek yummy treat, which with these cold, dark evenings is the very least we all deserve.
As always, 3 yummy courses, home baked bread with whipped butter and a little treat to finish off.
For this week I’ve gone for a chilled starter, showcasing the amazing beetroot at its best time of the year. With the addition of whipped Green Barn Farm goats’ cheese, this really is a lovely dish.
Your main course this week is as always using some amazing locally produced quality ingredients – I know I say it every time but we really are so lucky to have such amazing produce here on this lovely island.
The Moroccan lamb Shepherd’s pie is made using Isle of Wight Meat Company’s salt aged shoulder of lamb, which is marinated in a dry Moroccan spiced rub, then cooked very low and very slow, before being pulled and mixed with apricots, spinach, caramelised onions, carrots and a yummy spice blend, creating a thick yummy tagine style base, which is topped with a creamy 50/50 potato & sweet potato mash, crumbled with Briddlesfords Farm feta and chopped pistachios.
The vegetarian option is almost identical, instead using local Isle of Wight mushrooms, chopped walnuts and garlic – it’s as good (if not better) than the meat version.
Both are served with a generous helping of tenderstem broccoli, topped with pomegranate seeds & feta, along with the option of a tomato and chili reduction to add a bit of heat if you wish!
Dessert – You’re cooking this time!! That’s right – a bake at home, melt in the middle yummy rich warm chocolate fondant, served with clotted cream, raspberries and chocolate shavings, it’s an indulgent and fun way to finish your 3 courses 😊
As always, I’ve made a surprise treat for you to enjoy too (I’ve just not decided what that is yet!)
All the dishes are pre-cooked and prepared with simple and “mess free” reheating & plating instructions to include a video. Using the containers provided to reheat means there’s no need to get lots of pans or trays out, avoiding turning your kitchen into a warzone!
Delivery will be Wednesday 25th November – meaning you can choose to dine on Wednesday or Thursday evening, all in the comfort of your own home.
Limited numbers so please order as soon as you can to make sure you will get your own Yummy Box delivered to your door by myself next Wednesday 😊.
